Recipe for 4 medium to large sizes keto cheese breads / cookies / buns
Ingredients
For the Dutchies amongst us: of some products you can find a link to Body & Fitshop, where you can buy the product!
300 grams shredded (mozzarella) cheese
100 grams cream cheese
2 eggs
70 grams white almond flour
1 tablespoon baking powder
Herbs to taste: rosemary or other Italian herbs, garlic powder
Salt and pepper to taste
Note: if you decide to eat this recipe for lunch, add 200 grams of shredded zucchini during step 6 to make sure you’ll be consuming enough veggies!
How to bake these buns
Preheat the oven to 175 Celcius degrees.
Warm up the cream cheese until softened.
Mix the shredded mozzarella, and cream cheese in a large bowl.
Separate egg yolks from egg whites, and beat the egg whites with a whisk until stiff.
Add the egg whites to the mozzarella-cream cheese mix, followed by one egg yolk.
Then, add the almond flour and baking powder plus herbs to taste and mix everything altogether until a smooth texture develops. The dough will become quite sticky, but this is okay!
Place parchment paper on a baking tray. Form 4 balls (or more, if you prefer smaller cookies) of the dough, and place them on the baking tray, round-shaped. Don’t flatten them!
Bake for about 15-20 minutes, until the keto cheese bread looks golden, and your kitchen smells heavenly like cheese
Variations: this is a perfect recipe for trying out new combinations of herbs. Cheese is a food product that goes well with all kinds of herbs, such as cumin, Italian herbs, and garlic. You could even add some pressed garlic, if you don’t have any important appointments following up. Seems like you are in need of some extra fiber Today? In that case, add 8 grams of Psyllium Husk to the batter!
