Chocolate Chia Pudding: Easy Keto Breakfast Recipe!

Prepare this easy and delicious chocolate chia pudding the evening before, and save time in the morning. The waiting time is necessary, since the ingredients need to form a gel. Cause of its appearance and sweeth tooth, this dish can also be served as a dessert.
Chia seeds are rich in omega-3 fatty acids, and also very high in fiber. Therefore this recipe is a great fit for a healthy keto diet. Who says pudding can't be keto proof? ;)
Ingredients for 1 serving chocolate chia pudding

100 millilitres unsweetened almond milk
2 tablespoons chia seeds
1 teaspoon erythritol (to taste) or few drops of stevia
50 millilitres of unsweetened heavy cream
1 teaspoon of: cacao powder, vanilla-extract, and vanilla powder
1 tablespoon coconut flakes

How to make this chocolate-flavoured keto chia pudding
First you mix the almond milk, unsweetened heavy cream, chia seeds, cacao powder, vanilla powder, erythritol and vanilla-extract in a bowl of glass or a jar.
Then, place the mixture covered in the fridge for at least 3 hours until the chia seeds form a gel.
Remove the jar or glass from the fridge and stir well with a spoon.
Finally, serve the pudding with the coconut flakes and some frozen raspberries (optional: top it off with some whipped unsweetened cream or shredded 85% dark chocolate).
Variations: variations with this recipe are endless, so these are just a few of the options that you can try out. First of all, you can replace the almond milk with full-fat coconut milk. Not a fan of sweeteners? In this case you can leave out the vanilla and erythritol. In need of some extra protein? Rather add some protein powder. Finally, for the coffee lovers: add an espresso shot!
